Pujol, Mexico City’s most iconic restaurant, owned by chef Enrique Olvera, will make history: for the first time, it will open a 12-night residency in New York, from November 11 to 22, 2025 , inside the WSA building at 161 Water Street ( Time Out Worldwide ). This temporary relocation is not just a gastronomic event: it is a declaration of cultural identity, an invitation to experience the authentic, the profound, the transformative. Founded in 2000, Pujol has built its reputation on deeply Mexican ingredients, ancestral techniques, and an inventive sensibility that has redefined Mexican fine dining. Until becoming the first restaurant in Mexico with two Michelin stars ( Time Out Worldwide ), Pujol has not only been a place to eat: it is a symbolic space where memory, innovation, and flavor intertwine. What to expect at the New York residence? eight-course tasting menu from 5 p.m. to 8 p.m. ( Eater NY ). The price: $295 per person, with an optional drink for $195 ( Eater NY ). It may seem steep, but those familiar with the menu know that each dish is a literal journey to the epicenter of Mexican cuisine. Some of the most anticipated dishes include mole madre (made from a mole aged for years, accompanied by a new mole each night), smoked corn served in a pumpkin, and tortillas made with corn produced in-house by Pujol ( Time Out Worldwide ).
